Most diets are low calorie and/or low glycemic index. Either type causes you to use up your glycogen stores in your muscles and liver. This causes you to lose a lot of water weight.
Most of the 10 pounds in the first two weeks is water weight. You’ll gain some of this water back as your body adapts to the diet. This is one of the reasons people have plateaus.
